New Cellophane for Yeast Wrapping

Innovia Films has developed a new vibrant blue Cellophane™ film for wrapping fresh yeast to help bakers avoid product contamination.

The new film - Cellophane™ LMSCi - is designed to be used to wrap large blocks of yeast. The colour has been developed so that should a scrap of film inadvertently get mixed into the final product it can be easily identified and removed.

There is, however, considerably more to Cellophane™ LMSCi than its colour.

Because fresh yeast is a live product, giving off CO² and H²O during stocking and distribution it needs packaging with a precisely tailored permeability to both gases and moisture vapour. LMSCi has been manufactured with a permeability to moisture of 600 g/m2/day which has been shown to be the optimum permeability for keeping the yeast moist without encouraging mould growth when combined with an inner kraft paper wrap. The extremely high gas barrier of the LMSCi protects the activity of the yeast. The combination of the barrier properties maximizes the shelf life of the fresh yeast.

In addition, the Cellophane™ has to provide a good strong seal without the need for excessive pressure or heat so there is no risk of burning the yeast at the packing stage which would damage both product and pack appearance. It is important to retain the initial hygienic state of the yeast throughout distribution.

Seal integrity is important because of the extremely demanding conditions of high humidity and low temperature required during transportation and storage of the yeast before use.

In addition, the film is required to provide a complete bacteriological barrier. This is essential, because yeast is highly susceptible to all kinds of external contaminants.

Cellophane™ LMS films are specifically adapted to meet the demands of this application. Innovia Films applies tailored coatings to the base film to produce the specific level of permeability, heat seal performance and barrier. Recent modification of coating formulation and to the softeners in the base film have also produced even stronger and more reliable heat seals and even less sensitivity to moisture during the storage of the yeast.
